White Chicken (or leftover turkey) Chili (by Heather)

It's been a few weeks since Thanksgiving, Christmas is next week - now is the time to get rid of some of those turkey leftovers you stuck in the freezer after the big feast (you've got to make room for soon-to-be Christmas dinner leftovers!) 

This recipe is one of my favorite ways to make good use of all that turkey. Not to mention this chili recipe is just delicious! Always a crowd pleaser.  Whitney made my version of this recipe for a chili cook-off and won! It is tasty and easy!

White Chicken (or leftover turkey) Chili

1 lb. boneless skinless chicken breast (or a few handfuls of leftover turkey)
1 medium onion (chopped - or stick it in your food processor)
2 tsp. minced garlic
2 can great northern beans, drained
2 (4 oz) cans chopped green chilies
1 (14 oz) can chicken broth (I usually put in a little more than this)
2 chicken bouillon cubes
1 tsp. salt
1 tsp. ground cumin
1 tsp. dried oregano
1/2 tsp. pepper
1/4 tsp. cayenne pepper (or none at all if you're not into spicy - you can always let people put it on their own bowl of chili)
1 cup sour cream
1 cup heavy whipping cream

Serves 6-8

(For chicken version: to prepare meat for CHICKEN chili, boil chicken till cooked, then cut into 1/2" cubes and season with garlic salt)

In a large saucepan, add meat, beans, chilies, broth and seasonings. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes. 

Remove from heat. Stir in sour cream and heavy whipping cream. Serve with tortilla chips. Enjoy!!
